Started with one backyard smoker and a stubborn refusal to rush it.
mu.ribs began as weekend experiments in a backyard — chasing the bark, the smoke ring, the pull of a rib that lets go of the bone at exactly the right second. What started as a hobby turned into a waitlist, then a pop-up, then a following that shows up the moment the drop goes live on Instagram.

Every rack is trimmed and dry-rubbed by hand the night before. Nothing pre-cut, nothing pre-sauced.
Oak and hickory only
A two-wood blend, split and seasoned in-house. No gas assist, no liquid smoke, no pellets.
Low, slow, watched
12+ hours at the pit, tended by hand — the fire gets adjusted, not set and forgotten.
